Essence, flavours and tradition. La Oliva Town Council continues to position Fuerteventura as a leading destination, not only for its landscapes but also for the culinary tradition rooted in its history, at the San Sebastián Gastronomika 2026 fair. The Tourism Department, led by David Fajardo, together with the Primary Sector Department, headed by Rubén González, are presenting the municipality at the fair under the slogan ‘Breathe nature. Discover history’.
The aim is to highlight the way local residents have shaped their lives and their methods of obtaining food, which have become the stars of the traditional dishes that still reach our tables today. Fishing, herding and cereal farming have been, and remain, the roots of popular culinary knowledge that has been passed down from generation to generation to the present day.
The council is therefore taking advantage of the fair to showcase local produce from the north of Fuerteventura, with tastings of Tindaya goat’s cheese, Aguaguanche liqueurs and gins, wines from Bodegas Conatvs, Bodega El Follón, Bodega Tindama and Bodega Gavias de San Miguel, as well as gofio in a sweet version in the form of white chocolate gofio balls.
In addition, with the aim of bringing together local produce and tradition, several showcooking sessions will be held in which identity will take centre stage through the creative approach of a new generation of chefs. Among the standout dishes are grouper with caramelised onion on a bed of potato cream and black sponge cake, La Oliva goat croquettes, and lightly scalded gofio with fish and vegetable broth, served with grated majorero goat’s cheese and a crunchy toasted cereal topping, among others.
As a new addition, the public will be introduced to one of the traditional skills that make up the island’s cultural heritage: palm craftsmanship and the importance of making the most of natural resources, reflecting the need to keep preserving knowledge passed down through the generations.
The mayor of La Oliva, Isaí Blanco, said: “Our presence at Gastronomika allows us to promote our gastronomy and show that La Oliva has attractions that complement our natural surroundings, such as local produce, our culinary tradition, our identity and our customs.”
For his part, the Tourism Councillor, David Fajardo, explained: “Presenting La Oliva at this fair allows us to showcase other elements that form part of our identity as a destination, especially our culinary tradition, local produce and the work of the primary sector.”
Finally, the Primary Sector Councillor, Rubén González, stressed: “This fair highlights the work of our fishermen, livestock farmers and growers, as it is their daily efforts that allow majorero culinary tradition to survive to this day. In this way, new generations of chefs can continue to draw inspiration from the traditional produce of our land and the recipes that have accompanied us through the generations.”
“With this initiative, we want to highlight the efforts not only of our primary sector but also of our chefs, work that deserves recognition from public authorities,” González added.
Discovering Fuerteventura also means discovering its flavours, its traditions and the people who keep its essence alive. La Oliva can be savoured and enjoyed at the Gastronomika Fair from 5 to 7 October in San Sebastián.
